A Yummy Recipe

You'd never know I am on a major diet and exercise program and yet I am willing to put yummy recipes on here. My goal is to be physically fit by the end of the year. After 4 kiddos I needed to get my body back in shape so from time to time you may see me post about that subject. I am eating very healthy-whole wheat pastas and breads, olive oil, lots of fresh fruits and veggies but I am not keeping myself from an occasional little scoop of ice cream or other little treat. I made this jell-o recipe up, served it Sunday and got a lot of thumbs up. It is simple but tasty so I will share it today:

Peach Jello

2 small boxes of peach jell-o
1 cup of boiling water
1 can of peach pie filling
1 container of frozen concentrate 'white grape & peach juice'

Boil water and add 1 Cup of boiled water to the 2 boxes of jell-o. Stir for 2 minutes until the jell-o is well dissolved then add in the pie filling and stir. Once the pie filling is incorporated, add in the juice and stir till it is completely melted. Chill till firm.

In the summer when fresh peaches are so sweet and yummy I think I will try this with fresh peaches and the little containers of peach pie filling, that are in the fresh fruit section of my store. I used to only see Strawberry but I saw peach one day.

I wish I could sit and chat with each of you face to face, sipping on an ice cold lemonade (in the hotter months) or a nice hot cup of coffee (in the colder months), getting to know each other but this is fun too.
