I had a request for the recipe for my cookies that I posted the other Day.
I got this recipe from my Mother because each time she made them for my kids, they just loved them. We have made these so many times. My kids like them just plain and I have to admit they are pretty yummy but I had gotten the new cookie cutters and I was wanting to make the top with a cut out. The recipe does not call for any of this I just added it and they were very good.
I made heart shapes for the bottom but did not do a cut out on them. For every bottom cookie I made a duplicate top cookie but then did the cut out on the duplicates. I used a powdered sugar sifter to dust the top cookies, then I spread a layer of raspberry jam on the bottom cookies and made a sandwhich.----
{I have a different recipe for cut outs and you cook them with a piece of hard candy in the center where the cut out is. You use clear, colored candies for the center--like a jolly rancher, so when it melts it appears to be a stain glass cookies.}
Soft Butter Cookies
1 1/2 Cups powdered sugar
1 Cup BUTTER, softened to room temp
1 egg
1 tsp vanilla
1/2 tsp almond extract
2 1/2 Cups flour
1 tsp baking soda
1 tsp cream of tartar
I usually double this recipe.
Cream together the sugar and butter, then add in the egg and flavorings and blend together till completely incorporated. Add in the remaining ingredients and blend together. Make several balls of dough and place back in the bowl, then place in the refrigerator for 2 hours or if you need to get these made right away put the bowl in the freezer until the bowl is chilled.
Take one ball and roll out on a floured surface, to about a 1/4 inch thickness. Place the cookies on a lightly PAM sprayed cookie sheet and bake for 7-8 minutes at 375 degrees.
The thicker the cookies the better, if these are rolled out to thin they will not be soft, they will be hard and crunchy. Also watch them closely while they are baking. They will look done, puffy, but not brown or even golden, they are pretty white still. If they are over cooked they will be hard instead of soft.
I totally forgot that I had used all of the almond ext but I did have some coconut extract and Prince Charming and the kids loved them all the same.

ReplyDeleteI am definitely doing to give these a try! My father-in-law has been asking me to find a good recipe for butter cookies - he says his elementary school had the BEST butter cookies he's ever had and would like to have something like them again.
